30 hectares of vines
An exploitation on a human scale
Our vineyard covers a surface of 30 hectares, 25 of which are dedicated to AOC cognac, and is in good condition. It is largely composed of white ugni vines, which are specific to the production of cognac. The age of our vine stocks ranges from 1 to 80 years, and there is no empty space in the vineyard.

NOVEMBER, THE FALLING SAP
Our tasks start in November with the falling sap. Pruning is the most important step because it determines the next yearly crop and part of the following one. Along with distillation, the pruning activity will keep us busy during much of the winter season.
SPRING, THE REMOVAL OF SUCKERS AND VINE TRELLISING
When spring comes, the removal of suckers and vine trellising are required for bud selection and in order to guide and protect the branches. This is when we may have to hire seasonal workers in order for these steps to be accomplished in the required time. The vine branches are extremely fragile at this time of year and wind and rain can damage their growth.
WITH SEPTEMBER, IT'S TIME TO HARVEST
With September comes the grape harvest. This is both an exciting and harrowing time as the fruit of our year-long labour is picked in just a few days.

We pick the grapes and start the wine-making process on the spot, as we have a modern, high-performance equipment to extract the best from our grapes.
To obtain a quality wine for distillation, we control the temperature for the fermentation process. The quality of the wine obtained after two fermentations will determine the distillation and the subtlety of future wine spirits.
